Our Story

For over five years, our head baker Erika Marsi has devoted herself to baking in its purest form. For us, bread stands at the centre of a ritual of reverence for grain, living starter and, above all, patience.

We do not rush nature. We guide it with technique, until it gives us the perfect loaf.

The Process

The Santo Pane Trilogy

Three days devoted to turning pure ingredients into a singular experience. Every step is given silence, time, and watchfulness.

  1. Day 01

    The Foundation

    We select our finest flours and feed the levain, our mother starter. It is the awakening that builds the bread's base of flavour and life.

  2. Day 02

    The Patience

    The dough is mixed and begins its slow fermentation: a long rest in which time and silence develop complex structure and deep flavour.

  3. Day 03

    The Apex

    The dough is entrusted to the intense heat of the oven. The bake reveals a golden, crackling crust protecting a soft, perfectly open crumb.
